Our French baguette is made from half-white wheat flour and features a poolish (liquid pre-dough) aged for 24 hours. This helps create an airy and porous crumb. We shape the dough to be slightly shorter and thicker than a conventional baguette. We then bake it at a high temperature for a short period to create a moist crumb and a thin crust.
