The baguette is not only an essential in Paris. We also have traditional French baguettes in Basel. We combine type 720 semi-white wheat flour with warm water to make a pre-dough and let it prove overnight. The next morning its volume has increased fivefold, and we process the dough into fine baguettes with moist crumbs.
