Kloster bread

Kloster bread is a dark bread made from wheat and rye flour, with toasted malt and eight different grains and seeds. The toasted malt gives the bread its dark colour and slightly malty taste. The airy crumb is very soft. The Kloster bread gets its distinctive flavour not only from the various toasted seeds, but also from the 10 hours of proving time at room temperature that we give the bread before baking.

You can’t go wrong with this bread. One version, which also lends itself to the hospitality industry, is the grilled Mountain Climber’s Treat. Spread some tomato purée onto toasted slices, add some fried Malbuner bacon strips and put a slice of Swiss brie on top. Grill until the cheese has melted and serve hot.
