Description

The mill wheel is a light wheat bread with a soft crumb and irregular pores. It is made from a special soft yeast dough with a very high water content. We shape the dough only lightly after letting it rise to maintain its loose structure. We bake the mill wheel at a high temperature, which results in the dark, almost black crust.

Pre-dough: sourdough starter

Flour: Half-white wheat

Proving time: 10 h
